Preparation time:
approx. 20 minutes
Quantity for:
16 lamb cutlets
15g Sabo extra virgin olive oil
16g fleur de sel
30g Sabo Pizza oil
Suggested wine:
a red wine, a chilled rosé or a beer
-brush the cutlets with extra virgin olive oil and place them on the hot grill, cooking them for around 1 min on each side
-leave to rest for 5 min on a corner of the grill, away from the flame
Cooking instructions:
-place the cutlets on a tray, sprinkle with fleur de sel and the pizza oil
-you can serve them with jacket potatoes, grilled vegetables or a simple salad dressed with Sabo rice oil and salt (but it would be a crime to desecrate the flavours of the meat and its seasoning with other flavours)
Serving ideas:
If you taste this oil with your eyes closed, its richness of natural aromas and flavours will take you to a village somewhere in the Mediterranean, in the company of friends, enjoying some freshly baked bread with a nice glass of wine or a refreshing beer…………….

Tip: this dish can be made with any kind of meat, but lamb embodies the essence of the Mediterranean maquis; pork ribs would also work well
