ARTICHOKE, ROCKET AND PARMESAN SALAD WITH SABO OLIVE OIL

Ingredients:
8 pce artichoke hearts
2 bunches rocket
80 g parmesan cheese
40 g SABO Olive Oil
pce lemon
1 pinch salt and pepper
Suggested wine:
Drinking wine with artichokes, especially if raw, is not recommended
Preparation:
Clean the artichoke hearts and remove the spines, clean and wash the rocket. Squeeze the lemon; cut the cheese into thin strips (with a slicer or potato peeler).
Cooking instructions:
Dissolve the salt and pepper in the lemon juice, and mix in the olive oil with a whisk. Slice the artichokes as finely as possible and season with the oil sauce.
Serving ideas:
Form the rocket into a nest on the plate and put the artichoke salad in the middle; sprinkle the parmesan strips over.
